Hello,
The Pungseok Cultural Foundation is a public foundation established to honor the will of Pungseok Seo Yu-gu, the greatest scholar and official of the late Joseon Dynasty. Through the Ministry of Culture, Sports and Tourism’s “Pungseok Academic Promotion Research Project,” the foundation translates and publishes Seo Yu-gu’s Imwon Gyeongjeji, recognized as Joseon’s greatest practical encyclopedia, and other works by Pungseok. Based on Imwon Gyeongjeji, the foundation is working to revive and modernize our traditional culture.
Among the 16 subjects of Imwon Gyeongjeji, the Pungseok Cultural Foundation operates a food research institute to restore and modernize traditional Korean cuisine, based on Jeongjoji, the encyclopedia of food and cooking, and Boyangji, the encyclopedia of health and wellness. The Pungseok Cultural Foundation Food Research Institute strives to restore authentic Korean cuisine, much of which lost its original form during the Japanese occupation and the Korean War. The result of these efforts is the Joseon Chef Seo Yu-gu cooking series.
For the first time on Wadiz, we are presenting the results of our research and restoration of traditional foods, modernized by the Pungseok Cultural Foundation Food Research Institute.

Why Jayoungyeongsil Chose Wadiz
An era of culinary abundance. Today, Korea is living in a flood of cooking. "Stylish" and "delicious food" can easily be found on TV and in applications. But if we pause and think for a moment, are we eating "simple yet" healthy food that our bodies truly desire?
Seo Yu-gu was a nobleman from the highest family in Joseon and a top scholar who served as Chief State Councilor, but he was also an enlightened intellectual who cooked in the kitchen himself and prepared meals for his mother. In Seo Yu-gu’s writings, there is a passage: "Even water plants from the stream or wild greens from the field, once blanched by my mother’s hands, all had a unique taste."
That is why we came up with the idea: "Let’s bring the taste of a Joseon mother’s hands from 200 years ago into the 21st century."
With the desire to share the alchemy of 200 years ago—when mothers transformed wild vegetables into culinary magic—with people living today, we have launched this project and are meeting subscribers on Wadiz with "Vegetable Stories" and "Kimchi Stories." Our old cookbooks, including Jeongjoji, are filled with food that is "delicious," "beautiful," and "healthy" like sunshine. We will continue to work hard, trusting in the supporters who will back Jayoungyeongsil’s traditional food books.
