Yeongju, Gyeongsangbuk-do, where the scent of apples has lingered since my grandfather's time.
This place, where the aroma of apples has never faded for three generations, is my hometown.
Eight years ago, I left Seoul, where I had gone for study and work, and returned to Yeongju.ย In April 2018, the wedding I held in the apple orchard where I grew up became the biggest turning point in my life.. Now, together with my husband, I am learning the know-how passed down from my grandfather and father, and have been continuing apple farming for eight years. Now, before I knew it, four generationsare bustling together, nurturing dreams under the apple trees.

Sweet and delicious apples are born by allowing enough time to ripen on the tree. From my grandfather and father,I learned not how to produce in large quantities, but the patience to wait until each apple reaches its perfect sweetness.
Apples that I can eat with my family and proudly give to my children. That stubborn sincerity is the secret that has allowed Ggotji Orchard to continue farming for three generations.

While farming, there are always apples that tug at my heart. The imperfect apples gathered in a corner of the farm.Apples that are too small or too large to eat comfortably, apples with uneven color from less sunlight, and apples with small scars from being scratched by branches. Imperfect applesare just as delicious as the pretty apples, or perhaps even tastier. Our family has put in the same sweat and care all year long, but simply because of their appearance, they are overlooked in the market. It always remained in the farmer's heart like a painful thorn.

A discovery that could restore the value of ugly apples. This concern was the beginning of 'Kkokji Farm Apple Butter.' Wefocused on what was hidden behind the ugly appearance, and began to concentrate on the apple's original refreshing and sweet taste. Endless research began to find the most delicious way to use these apples, which smell just as fragrant and taste just as sweet once peeled.

At first, we thought of apple jam, which everyone thinks of,but jam has a very high sugar content, making it burdensome to eat every time,,and the apple's unique crisp freshness and flavor were hidden, and the intense sweetness was not the direction I wanted to go..ย A product where apples are the main character, a product you can eat every day without feeling burdened, anda product I wanted to give to my children with peace of mind.

On a gourmet trip to Japan in search of an answer, I fatefully encountered 'apple butter spread.'Softer than jam and lighter than butter, with the apple's original freshness spreading throughout the mouth, it was a new world of gourmet taste I had never experienced before.I still can't forget the shock of that one refreshing bite spreading in my mouth.

After returning to Korea, I began a year of intense research.ย
We replaced some of the sugar with locally sourced honey that enhances the fresh flavor of apples, and tested countless dairy products such as cream to find the optimal taste. Finally, we discovered that unsalted butter was the best recipe. Even after that, we adjusted the amount hundreds of times in 0.1g increments.

After a long six months of research,ย we preserved the natural sweetness and tartness of apples, and added richness and smoothness with butter, creating a spread that is lighter than butter and less sweet than jam. This is how the final form was completed.

Watching the family and friends of Kkokji Farm enjoy it deliciously, we realized that our research was not just an attempt to use up imperfect apples, but a valuable journey in discovering the endless flavor possibilities of Korean apples. That is what it truly was.
Now, we hope that even more people will get to experience this special spread.A little magic that unfolds on a roughly toasted slice of bread,, and the experience of expanding your culinary world with just one spoonful, is something we truly hope you will enjoy.

a little more.
dear supporter!
Just in case you still have any unanswered questions!

Hello.I am Jaeseon Lee, the representative of Kkokji Farm, who is constantly researching to share the taste of our apples. Nice to meet you. ๐
Since I was young, I grew up watching my grandfather and father tending to apple trees. I spent my childhood running between the apple trees. Then, when I turned twenty, I moved to Seoul. In Seoul, I tried various jobs such as sound engineer, baker, and landscaping company employee.

The more I lived in the noisy city, the more I missed the quiet life in Yeongju. So in 2019, my husband, who worked in the restaurant industry, and I moved to Yeongju to start a new life. We even had a wonderful wedding in the apple orchard where I grew up. ๐ฐ๐ปโโ๏ธ๐คต๐ป

'Kkokji Farm,' named after my mother's childhood nickname 'Kkokji,' has beenfor 3generations, growing apples with know-how passed down and the devotion of our entire family.ย Now, our children run through the apple orchard and enjoy the happiness of eating freshly harvested sweet apples to their hearts' content.

At Kkokji Farm,we use organic compost and minimize the use of pesticides as much as possible. We strive to grow our apples as healthily as possible so that more people can safely enjoy Yeongju's apples.

In addition,we are developing various ways for people to enjoy Yeongju apples in their daily lives. We are constantly researching and developing a variety of foods. We continue our journey to find recipes that bring out the true flavor of apples without masking it with sugar or additives.
The goal of Kkokji Farm is to discover even greater possibilities for apples. We don't just want to increase the number of products or develop items simply to use up non-premium apples; we want to become a brand that expands the uses of apples as an ingredient. To do that, we would like to gather various opinions from Wadiz supporters.
