Hello, this is Ritzbin, greeting you for the first time on Wadiz.
In last March, which was exceptionally white and chilly, I visited the snowy city of Hokkaido in search of a special inspiration.

As someone who makes desserts, my travels always unfold a bit differently from others. I spend more time exploring famous dessert shops and department store food halls in the area than admiring beautiful scenery. My radar was busy during this Hokkaido trip as well.
Then, I suddenly noticed something interesting. Perhaps because it is a city known for its dairy products, there are so many desserts there with soft and rich cream sandwiched gently. I wondered what it would be like to reinterpret these charming sand desserts with Ritzbin's unique style and a more special texture.
As soon as I returned to Korea, countless experiments and tests began in my studio.

The aesthetics of crispy outside and moist inside: 'Sando Baked Confectionery' that looks like a cookie but isn't quite a cookie.
A texture that's simply soft is boring, isn't it? After countless trials and errors, I developed a baked confectionery sheet with a crispy, cookie-like texture that breaks pleasantly. I broke and discarded so many batches to achieve just the right state.
After carefully pressing and baking this confectionery, I generously filled it with a matching filling. Then, I finished it with chocolate to perfectly balance the flavors.
The first bite is light and crispy, followed by a moist and sweet inside.
This is the result of focusing solely on my hands and sense of taste. I want to prepare this exciting creation in the freshest condition for Wadiz supporters who truly love desserts.

A sweet journey with six flavors.
This lineup is carefully composed to highlight the original taste of the ingredients while allowing you to experience a variety of textures in your mouth.
1. Apricot Caramel
This is a combination of homemade caramel, boiled directly in-store, and dried apricots. Just as the rich, sweet, and slightly bitter taste of caramel lingers in your mouth, the chewy dried apricots burst with a refreshing tanginess.
2. Cranberry Crunch
The base is a smooth white chocolate ganache. To this, I added dried cranberries simmered for a long time in deeply aromatic rum, and mixed in roasted, savory crumbles. The hidden crunch within the softness adds extra enjoyment.
3. Fig Cream Cheese
Although this is a universally loved combination, I paid the most attention to the ratio. Between the rich cream cheese sand that melts smoothly in your mouth, I finely chopped dried figs with a delightful popping texture. The nutty and sweet flavors blend gently together.
4. Pecan Nutella
While preserving the rich chocolate flavor of Nutella, I reduced the sweetness and maximized the nuttiness by mixing in oven-roasted, chopped pecans. The sweetness is pleasantly toned down, and the deep nuttiness of the nuts fills this charming sando.
5. Mocha Cream
A smooth anglaise cream made with egg yolk meets coffee. The mocha cream is sandwiched in, creating a rich yet soft flavor. Its acidity is most appealing when enjoyed with a warm Americano.
6. Black Sesame
Inspired by Hokkaido and infused with a Korean savory touch. Filled with rich anglaise buttercream made by thoroughly melting black sesame powder, each bite layers a nutty flavor that calms the mind. Recommended for those seeking a mildly sweet and light dessert.
